I’ll call it a “Layer Salad Cup” until I find the proper name for this, but this is what it looks like. I especially liked this image because of how the plastic fork was incorporated into the meal.

I came across this recipe while looking for things to serve with salmon.
- Dianne’s Southwestern Cornbread Salad from Southern Living
- 1 (6-ounce) package Mexican cornbread mix
- 1 (1-ounce) envelope buttermilk Ranch salad dressing mix
- 1 small head romaine lettuce, shredded
- 2 large tomatoes, chopped
- 1 (15-ounce) can black beans, rinsed and drained
- 1 (15-ounce) can whole kernel corn with red and green peppers, drained
- 1 (8-ounce) package shredded Mexican four-cheese blend
- 6 bacon slices, cooked and crumbled
- 5 green onions, chopped
I like the flavor of the following dressing and I have made it a couple of times, but I’m not sure of how it actually affects my weight & blood sugar.
Creamy Cilantro Lime Dressing
- 1/3 cup olive oil
- 1/4 cup lime juice, more to taste
- 1/2 cup mayo
- 1/2 teaspoon salt
- 2 garlic cloves
- 1/2 a jalapeno, sliced (more for more heat)
- 1/2 teaspoon honey, more to taste
- 1/2 cup cilantro, packed (tender stems OK)
