- 1 head cauliflower, cut into florets
- 1 tablespoon olive oil
- 1 clove garlic, smashed
- ¼ cup grated Parmesan cheese
- 1 tablespoon reduced-fat cream cheese
- ½ teaspoon kosher salt
- ⅛ teaspoon freshly ground black pepper
Modified Recipe
- 1 head cauliflower + optional 1 cup broccoli florets
- 2 tsp olive oil
- 2 cloves roasted garlic
- ¼ cup reduced-sodium Parmesan cheese
- 2 tbsp plain Greek yogurt (instead of cream cheese)
- ¼ tsp kosher salt (or a salt-free seasoning blend)
- Black pepper to taste
- Fresh herbs (parsley or chives) stirred in at the end
