Cauliflower Mash

Original Recipe

  • 1 head cauliflower, cut into florets
  • 1 tablespoon olive oil
  • 1 clove garlic, smashed
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon reduced-fat cream cheese
  • ½ teaspoon kosher salt
  • ⅛ teaspoon freshly ground black pepper

Modified Recipe

  • 1 head cauliflower + optional 1 cup broccoli florets
  • 2 tsp olive oil
  • 2 cloves roasted garlic
  • ¼ cup reduced-sodium Parmesan cheese
  • 2 tbsp plain Greek yogurt (instead of cream cheese)
  • ¼ tsp kosher salt (or a salt-free seasoning blend)
  • Black pepper to taste
  • Fresh herbs (parsley or chives) stirred in at the end
