I currently like the Sanderson Farms Chicken Livers (and Gizzards) sold at IGA, and specifically the IGA in Eutah Village Shopping Center in Fayetteville. Why? Because they keep the white plastic containers free from blood on the outside of the container. Hey, I know that livers are soaked in blood, but it is unsightly to not wipe off the outside of these packages before putting them on the counter for sale.
There are enough livers in each container for about 3 helpings, and I currently like to fry them up, with a little onion, in my electric wok. They cook quickly and I can cook more than just one meal’s worth, and store the rest in a Rubbermaid container in the fridge. They reheat well in the microwave.
I put some oil, Olive or Avocado, or even mixing one of those with some Toasted Sesame Oil in my wok. I add some garlic powder and S&P while frying them. I flip them over a couple of times, and cut them with the edge of the rubber spatula. I have two of these heat resistant spatulas, one with a blue blade and one with a red blade. Even though they are made of a flexible rubber, their edges are sharp and will cut chicken or a chicken liver if needed. *The chicken that I use when fixing a Chicken Stir Fry.
I find that after the chicken livers and onions are cooked, I can just slide them up and over the edge of the wok and onto a plate, or into a storage container.
There are two other sides that I like to eat with my stir fried chicken livers. One is Stir Fried Green Beans and the other is an Asian Cucumber Salad.
The Asian Cucumber Salad has Toasted Sesame Oil, Spicy Chili Crisp, Soy Sauce and a little sweetener. This salad with the sweet vinegar helps cut the heaviness of the green beans and chicken livers.
The Stir Fried Green Beans may have some onion, sesame seeds, garlic powder, S&P, powdered ginger and a little sweetener. I might even use Toasted Sesame Oil to fry these beans.
I fixed a chicken stir fry last night and this time I added some steamed green beans which added color to the red bell pepper & orange carrots.
Seems that there was a young couple and the wife came to her husband and said, “I want to get a pet, to keep me company.” The young man replied to his wife, “Well, we can’t afford a pet at this time. We just don’t have the money.”
She said, “But, I’m so lonely while you’re at work each day.” Knowing she was lonely, but that they didn’t have any extra money to spend, to buy a pet, any pet, or take care of a pet, any pet, he suggested that she visit the local Pet Shop and see if the owner could suggest a cheap pet. Free would be nice, but he really didn’t expect her to find any suitable pet that they could afford. He kissed her goodbye and headed off to work.
The young wife got ready and then went to town to do her daily shopping. On her way back home, she saw the Pet Shop and decided to stop in to see what kind of pets were available.
The shop owner first showed her a dog, a Great Dane. She asked how much food it would eat each day and then how much the very large dog would cost. The Great Dane had beautiful eyes, she thought, but she knew that she and her husband wouldn’t be able to feed the dog every day, and the cost of buying it was what her husband made in a week. She had to say no, and then she mentioned to the shop owner that she needed an inexpensive pet to keep her company.
The shop owner next brought out a beautiful long haired white cat with a fluffy tail, that was swishing the air as if it was swatting flies. “Oh, what a beautiful cat,” the young woman said. How much is she? When the shop owner quoted the price, which he thought was especially low for such a beautiful animal, the young woman’s face turned somber. “Oh my, still too high,” she moaned. Don’t you have anything that almost costs nothing, to buy, and to feed each day?
The shop owner thought another moment, and then the young woman saw what she thought was a light turning on in the shop owner’s face. His eyes brightened and he said, “I have just the thing, and it only costs 50 cents to buy and is very easy to feed.” Let me go back and get it.
In a short while the shop owner returned carrying a furry brown ball. There were no eyes, or mouth, a nose, or even anything “unmentionable” on the other end, because from what the woman could tell this animal didn’t have a beginning nor an end.
The shop owner proudly placed the furry brown ball on a nearby stool, stepped back and with his hands presented the potential pet to the young woman. The woman moved closer to the stool, even squinting as she tried to get a closer look at the animal. She then asked the shop owner, “What kind of animal is it?” The shop owner proudly stated, “Why mam, this is a Wooly Bugger, and it only costs 50 cents to buy it, and it will eat almost anything.” The young woman thought, “Only 50 cents, that’s a really good deal, especially if it will eat almost anything.”
But then the woman asked, “But, I can’t tell where it’s mouth is located, how do I feed it.” The shop owner then bent over and fished an empty drink can out of a nearby trash can. He placed the can on a table next to the stool and then said, “Wooly Bugger. Can.” And in the blink of an eye, the brown furry animal became almost all teeth, and they were extremely sharp and long glistening teeth, and it was spinning around like a small tornado, and then it jumped on the can, and in a matter of moments, the can was not only shredded to pieces, but you could hear the tin rustling as the Wooly Bugger finished the last bite. Viola, no more can.
The young woman was amazed, but she asked, “Does the Wooly Bugger eat only cans?” The shop owner, said, “Oh no mam, it will eat almost anything. All you have to do is tell the Wooly Bugger what you want it to eat.” The young woman asked, “May I give it a try?” “Sure,” replied the shop keeper.
The woman looked into the trash can and saw a small empty box. She took the box out and placed it on the table. And with the shop owner’s encouragement, she said, “Wooly Bugger, box!” And just like before the Wooly Bugger started to spin and there were all those glistening, shiny white teeth twirling as the Wooly Bugger pounced upon the box. It was gone is seconds also. You could hear the Wooly Bugger as it made it’s last gulp, and offered a burp as if it was extremely satisfied with this meal. This as there was a slight aura of saw dust swirling about the furry round ball.
The young woman said, “I’ll take it,” and then reaching into her purse pulled out two shiny quarters and handed them to the shop owner. She walked out the door carrying the Wooly Bugger in her purse, and with a satisfied smile on her face.
She got home, took the Wooly Bugger out of her purse and placed it on the dining room table and then went about putting up the other purchases she had made in town.
Not too much later, the young woman heard her husband’s car arrive and the car door slam. A few moments later she heard the front door open and close and she called to her husband. He walked in, looked over briefly at the furry brown ball sitting on the table, and then hugged his wife and planted a kiss on her cheek.
The young woman smiled, no she beamed, and proudly motioned toward the Wooly Bugger sitting on their dining room table. “I found the perfect pet at the Pet Store this afternoon, and it only cost 50 cents, and it will eat almost anything.” “What,” her husband replied quizzically? “This,” he said as he pointed to the brown furry ball? “You paid 50 cents for this?” The young wife said, “But it’s a Wooly Bugger, and it only cost 50 cents.”
Her husband frustrated said, “Wooly Bugger! My ass.”
And as we all know, it’s not smart to point a Wooly Bugger to a ready food source, even if we do it unintentionally. Maybe, especially if we do it unintentionally.
So, all that so that you might begin to understand the phrase, “Wooly Bugger my chicken!”
I bought a whole Rotisserie Chicken at Harris Teeter several days ago. Well enough days to have four meals over four days without having chicken two meals in a row, and also scavaging enough meat for a fifth meal of Avocado/Chipotle/Chicken Soup. And the coup de gras, I used the remaining chicken carcass and any skin, meat, gristle, bone and/or fat to make some homemade chicken stock. I added the frozen veggies I had been saving: onion tops & bottoms, carrot ends and skins, and the root end and tips of the celery I had purchased, added some seasoning S&P, garlic powder, thyme, and basil. In essence, once I was through with the Rotisserie Chicken from Harris Teeter, there was almost nothing left, and I didn’t even have to point my Wooly Bugger to the chicken.
By the way, as I googled for the name “Wooly Bugger” I first came across the name given to a specific fishing “fly,” the “Wooly Bugger.” I saw nothing about the joke I had heard long ago, and so I guess my retelling of the story here helps keep it alive, or not.
And today as I was going up to the Self Check-Out at the Walmart, I noticed the heat from a warming unit, and then saw several boxed rotisserie chickens. They looked & smelled delicious through the clear packaging, and I noted that the price for a whole chicken was under $7. I said, possibly out loud in a soft voice, “That’s a good deal.”

So, David’s has discontinued their breakfast special, but it still cost about a dollar less than many other breakfast restaurants.
I stopped by a health foods store, and then drove to Farmer. Yep, not much there. I then rode past the NC Aviation Museum and came back to Food Lion to buy some Apple Cider Vinegar and Splenda sweetener packets. The Ginger/Lemon/Honey drinking vinegar I bought just wasn’t vinegary enough, nor sweet enough. Then I headed up to Replacements, Ltd. to see if I could find the young woman who had given me a great deal of her time, my first (and only up to this point) visit. She left before I bought the Lennon Golden Julliard patterned seafood fork, so any commission she should have received was lost. In our brief visit, I got the impression that the young woman was divorced and that she had at least one child. But, she wasn’t there yesterday, even if she still works there.
I then drove directly back to Asheboro to No.1 Chinese Buffet and had lunch there. My first plate I focused on the chicken on a stick, the green beans and the wonton & egg drop soups mixed, with chopped green onion and fried wontons. And, I think I also had a small slice of banana, very little rice and some fried chicken livers. The livers had chopped jalapenos. One dish, maybe chicken had fried jalapenos, and the livers had fresh chopped jalapenos.
As I was paying at the counter, there was an older Chinese gentleman (perhaps the owner) and I got to thanking him for the good good, which I mentioned specifically: chicken on a stick, the green beans and the wonton soup. He thanked me, and we actually shook hands.
I then drove over to the Library. I had a strong desire to just drive home, but thought it would be a waste not to at least stop in to see what new things they had.
I took the slightly longer way back to Fayetteville, staying on Hwy. 421 from Sanford over to Lillington and then back down home. I did this because of the lateness of the day and that I knew there would be a bunch of traffic on Hwy. 87 around Spring Lake.
About four miles from Siler City, on Hwy. 64, they are furiously building the Wolfspeed manufacturing facility. They were paving some roads nearby but still working on the gigantic facility. The size of this complex is massive and impressive.
I stopped at the Food Lion in Lillington to buy 2% Milk and then headed home.
I made almost a quart of the Ginger/Lemon/Honey Vinegar, but instead of honey I used a combination of Splenda, Agave Nectar and Sweet n Low, and I used ground powdered ginger and reconstituted Lime juice. Still, it came out tasting surprisingly similar to the “store bought.” Oh, just thought, I used both Apple Cider Vinegar and Red Wine Vinegar. I like the flavor of Red Wine Vinegar and use it a lot in my cooking & eating. And for portions, I used two part of the Apple Cider Vinegar, about .25 Cup of Red Wine Vinegar and 1 Cup of water.
Reader’s Digest: Magic Foods for Better Blood Sugar
One of those books that I must have found at a library book sale for a buck or two. It’s re-enforcing that my choices, for the most part are good and in line with eating better. There is a test on pp. 60-61 regarding my current eating habits, and I think I did pretty well… Yeah, I did. I just checked and I scored a 27 which was pretty good.
But I just read that Agave Nectar is terrible because it causes blood sugar spikes, and a quick google has found nothing positive about using it. But, somewhere inside, I feel that there is something special about AN. If nothing more, that it causes chocolate syrup or honey to dissolve in cold milk. *If you’ve ever tried putting either of those in cold milk you know that they don’t mix well. They fall to the bottom of the glass, but if you add a little Agave Nectar, and stir, they completely dissolve.
I’ve been enjoying the Greek Gods Yogurt with various fruits or fruit purees that I have made. I pureed some raspberries and added a little Splenda, or I pureed a persimmon and had that with the yogurt. And the other night I added some walnuts to the mix. Strawberries, blueberries, blackberries. Loved it all.
I’ve been eating more oranges. Found the Cara Cara orange at Pate’s to be really flavorful. I bought a zester on Amazon and have actually zested several oranges before eating them. I put some of the zest in a sandwich bag and put it in the freezer, and some in a baggie just for current use. The current use is to add it to my Constant Comment hot tea for added citrus flavor.
*But, my goal was to have plenty of orange zest to go into the Dolce “K” Sweet Olive & Fruit Mix (Whole Foods) that I’ve learned to make at home. I haven’t gone back to my test batch that has been in the fridge for several weeks now. I don’t expect it to go bad, but who knows.
Recently, I’ve made some good Chorizo & Lentil Soup, and a good Seafood Chowder. I added more smoked paprika and regular paprika to some Spanish Chorizo (without the skin). I’ve got a basic ingredients list for the Seafood Chowder. The four seafood items currently include: cod fish, chopped clams, bay scallops and shrimp. I also include okra (fresh when I can or frozen), onion, potato, tomato & zucchini.
Since seeing Lee’s Fresh Market ad on TV, and then tracking them down just a couple of miles outside of Benson, North Carolina, I have shopped there repeatedly. It only takes me about 37 minutes one way, back through Erwin to get there. The two things I’ve bought the most there have been their Pepper Bacon and their Thick Cut Pork Chops. As long as the pork chops are on sale, what a deal! I can make at least 3 meals out of each pork chop. If they are a pound each, and even with the bone, you are still going to get a 3.5 or 4 ounce chunk of meat, and they are delicious when broiled in the oven.
[02/08/25]: And, I just broiled one tonight. I found two packages like the one shown above in my freezer and took one out to thaw. I only cooked one for dinner, but yes they still make about 3 meals. Amazing to me how quickly it cooks, being as thick as it is. I think it took about 10 minutes on the first site and then I flipped it for maybe another 4 or 5 minutes and it was done. The meat is still tender & moist on the inside with just a few charred edges, and it’s not raw, but just slightly pink on the inside. I’m now in my Asian seasonings era, so the English cucumber had some Spicy Chili Crisp Oil, Toasted Sesame Oil, Red Wine Vinegar, Splenda Sweetener & Soy Sauce. The Stir Fried Green Beans had Toasted Sesame Oil, Ground Ginger, Red Pepper Flakes and some Soy Sauce.
I look at the image below of the chicken gizzards and yes, they were good. But, I was thinking of buying some chicken livers and Stir Frying them along with some of the green beans. I had a couple of helpings of the Stir Fry Green Beans at the “No. 1 China Buffet” in Asheboro, North Carolina last week.
I picked up a container of chicken livers at the IGA across town this afternoon, but the outside of the container had bloody smears and I couldn’t make out whether the livers were fresh. I put them back thinking I would stop at the IGA in Eutah Shopping Center. That is where I had taken the picture below, previously, of the gizzards. Eggs and chicken prices have gone up, although ALDI’s still has a dozen eggs for under $5, but livers & gizzards are still reasonably priced. [end]
I’ve also bought a bunch of the Sanderson Farms Chicken Gizzards at IGA. They looked good in the store and they translated well in the pot. An earthy flavored delight, that goes well with blackeyed peas and well seasoned collards.
I wanted some collards and blackeyed peas for New Years Day. A little bacon grease starts either, but then I added a white potato to the canned collards. I don’t need to buy a large bunch of collards and cook them down for just one person. The blackeyed peas just need time to morf into something delicious with some chopped sweet onion. The onion goes good on the collards also.
I do eat a bunch of nuts, and some dried fruit. I don’t eat a bunch of dried fruit because of the extra sugars, but I like a couple of pitted prunes (the really moist, shiny dark ones), a pitted date every so often, a few raisins with some roasted pumpkin and walnut pieces. I like the wasabi/soy powder on the pumpkins seeds. I like almonds and cashews, and I love raw peanuts in the shell from Pate’s. I ate them repeatedly for about 3 months until they were no longer available.
I’ve been drinking “Bill’s Drink Mix & Some Real Juice” for months now, and almost every day finishing off a 1 Litre carafe. There are four ingredients in this drink and it doesn’t work for me if any one of them is missing. They include: orange juice, cranberry juice, Pomegranate Lemonade Mix, and Sweet Tea Mix, with water. The majority of this drink is water in which to dissolve the two flavor packets from WalMart.
I bought a new electric wok (Aroma from Amazon) recently, one as a test, and the other as a wedding gift. When I saw the quality of this purchase, I ordered the second one. I go through stages of eating a lot of stir-fries, and then none for a long time, but once I’m into it, they are so easy to prepare the basic ingredients, quick to cook, delicious to eat, and finally cleanup is a breeze.
I like both chicken & shrimp as my protein, but then I want sweet bell pepper, onion, carrots, and a little pineapple. Add some soy sauce and toasted sesame oil, some spicy chili crisp & a little Splenda. If you have the Stir Fry Vegetables great, and Sugar Snap or Snow Peas are icing on the stir fry. And I try to finish off with a slurry of corn starch. Although I love rice, I rarely have rice with my stir fry. I might include a few Angel Hair noodles in the stir fry to soak up some of the juices. *I have stopped by the local Chinese restaurant and picked up a couple of egg rolls to go with my stir fry. These are one of the few fried items I still eat, although some good fried chicken from the Seaboard Station in Hamlet is always appreciated.
I so want tortilla chips to be healthier because I can just imagine that all the ingredients I put in my homemade salsa are healthy: roasted garlic tomatoes, onion, roasted jalapeno & poblanos, some chipotle peppers, some Salsa Ranchera (Herdez) and a little Splenda.
I like making hummus at home. The basic ingredients include: garbanzo beans, tahini, cumin seeds, lemon juice (lime), olive oil and maybe some water to thin it out, if necessary. I like to eat hummus with carrot sticks, some sweet onion & sweet colorful bell pepper. I especially like eating smoked oysters with hummus. The problem is that hummus is high in calories.
I was getting a half loaf of whole wheat, multi-grain bread sliced at Publix and happened to look down and see a bag of Sourdough English Muffins. They looked good, but I knew that regular English muffins were horrible for blood sugar spikes. So, I quickly googled to see if sourdough was diabetic friendly. The AI said, “Yes,” so I bought both items. It has a lower GL than other breads.
I had bought some fresh ham at the Harris Teeter near Pharaoh’s Legacy across town. This ham was pre-sliced and I checked the price online and it was 1.5 lbs. @ $3.99. That’s a great deal. *I have found this ham also at LIDL, but currently it is about $6 for the 1.5 lbs. I divided the ham up when I got home and froze half. I then made an Egg McBill (like an Egg McMuffin, but at my home) using the sourdough muffin. I toasted the bread first, then added a slice on each side of Wegman’s White American Cheese. I heated a slice of the fresh ham, but because it started to “pop,” I only microwaved it for about 25 seconds. I also took a large egg and beat it in a bowl adding, Dulse, ground Long Pepper, salt, and garlic powder. I microwaved the egg for about a minute and a half. **I’ve now tried the Ezekiel 4:9 Sprouted Grain English Muffin and it was good, but I prefer the “Knock Your Sprouts Off” – Reduced Sodium, sprouted grain bread from Aldi’s.
I had already put half of the ham on each toasted, melted cheese side of the muffin and I dumped the cooked egg on one of those slices. I put the two halves together and went and ate a delicious Egg McBill. Or is that Bill McMuffin?
Forgive the messy look of this sandwich. The muffin started off distorted and I had to make all the other items fit, but take my word, “This was a very satisfying breakfast.”
I mentioned that the fresh ham was an excellent buy, as was the thick cut pork chops on sale, but another “good buy” is the whole rotisserie chicken at Harris Teeter. I like the meat better at HT than Publix, which tastes a little mealy, and costs about a dollar more. The HT Rotisserie Chicken costs about $7.99, but I can make from four to five meals from the one chicken. The last meal is probably a chicken salad.
*I can also use the chicken carcass & skin to make homemade chicken broth. I freeze some onion tops & bottoms, carrot ends & celery ends (stalk and tips). When I buy a rotisserie chicken I pull off the different meals and then pull off the remaining meat to make a chicken salad, but then I am left with the chicken skeleton. I put that along with any skin I have saved in my stock pot and add the frozen veggie leftovers, along with any fresh carrots, onions and/or celery that I might think is needed. Add some S&P, some garlic or garlic powder and any other seasonings and let it simmer for at least a couple of hours. Strain the broth into containers. I use empty Greek Gods Yogurt containers that have a good snap on lid. I think I filled about 4 containers full with a little left over last time. What’s left in the bottom of the stock pot looks like the refuse that gets caught in a flood.
I have found this Hatfield Ham at LIDL, I think, but I haven’t bought any in a long while because I think the sodium & fat are prohibitive.

[NOTE]:I hadn’t thought to mention this, mainly because I don’t think anyone else besides myself is actually reading what I write here but, the reason why I’m not illustrating my postings with images is that I’ve run out of free space on WordPress, and I haven’t chosen to buy more storage space. That is unfortunate because I like to take a lot of pictures with my phone so that I can illustrate what I write about. And, I like to write first to visualize my point, and then check the photo(s) to see if the image matches up with what I’ve written. *As a temporary solution, I’ve started linking to my images on Amazon.
This reminded me that as much as I would like to think that I’ve never been wrong in my memory, I have had many examples brought to the fore that were irrefutable. I don’t always remember or perceive things as they are. **In high school, for my Senior picture I had an outfit that I had put together. It may have started because I had bought a pair of Converse Blue Suede tennis shoes. I paired these shoes with white “Mess” pants (the Navy bell bottoms with button fly), a red terry cloth short sleeved shirt (with a few narrow white accents around the sleeves) and Red, White & Blue suspenders on which I had glued a small white star on the front of each suspender. Oh yeah, I think I also had red socks. I astill have a black & white picture of this outfit where I am sitting on a table top, with the female version of me. I was “Most Studious,” although I would have preferred to be “Wittiest.” But the point is that for years I remembered my blue suede tennis shoes as having a white star on the side of each. I did look online at some point and see that these Converse Blue Suede tennis shoes did have white stars (on some), but the pair I had only had white stripes. And, this was one example of where I had remembered something incorrectly. Not a big thing, but important to the overall image of my past. [end NOTE]
I noticed these smoked oysters on a shelf in Lidl. They were only $1.29 a can, and although I had never tried this brand, that was a good price if they were any good. And, when I tried them, “they were good.” Good flavor and there were fewer of them in the can, but that was because they were slightly larger than those in the other brands I’ve tried. I see they are 140 calories for the whole 3 oz. can.
When I think of smoked oysters, I usually think of making hummus at home. I like the flavor of hummus made with garbanzo beans, whole cumin seeds, lime juice and some avocado oil (olive will do). A little water if needed to make it a little smoother. The problem with hummus is that it is high calorie.
I think the only other meat that I like with my hummus is the hard salami, like the Wegman’s Black Pepper Sopressata Salami. *Wegman’s no longer sells the pepper salami. I like olives with my hummus: Castelvetrano or the Ripe Green Olives that come in a can at Whole Foods.
I like to make an “Almost Vegetarian” Meal out of my hummus. I’ve mentioned salami and the smoked oysters above, but the rest of things that I pare with my hummus include: sweet onion, carrot, tomato and sweet (colorful) bell pepper and I might even want to add a few pickles (either Ranch Dill spears or the Sweet Bread & Butter Chips).
I don’t recall the exact results, but I think my hummus meal affects both my blood sugar level and my weight. I could probably eat less hummus, with all the other good stuff.
Oh yeah, making hummus is relatively inexpensive. A can of garbanzo (chickpeas) beans, a little lime juice, some oil and a few cumin seeds (you could also use ground cumin). Looks like a 15 oz. can of garbanzo beans cost anywhere from $.85 to $1.69. I could make two or three helpings of hummus from the one can.
This is where I could type about the Braun Kitchen Multi-Tool (stick blender, chopper, wisk) that I have. For several years I had the smaller version of this tool and it just wasn’t powerful enough to blend a whole can of garbanzo beans into hummus. I had to blend half a can at a time. Finally I bought the larger version and now can easily blend a whole can of beans at a time. *This chopper also works great for making salsa and guacamole.
And as I’ve written previously, I would suggest buying this kitchen multi-tool for a “growing boy” going off to college. It does so much without having to cook anything, although if you can roast some poblanos or jalapenos to go in your salsa and guacamole that adds greatly to their flavor. But, filling a growing boy, cheaply can be done with this. Veggies to go with homemade hummus. Chips for all the salsa or guac he makes. And he could become the hub of his dorm with others supplying the veggies or the chips and he making the hummus and/or salsa. Now that I think about it, making guacamole is relatively cheap if you can get medium avocados at WalMart for about a dollar.
[NOTE 10/19/24]: I was in an IGA yesterday and was passing by the chicken section when I saw a container of chicken gizzards. I stopped and picked them up, and noticed that they were quite large and fresh looking. I bought them.
So good that I went back for more.
Later at home, I googled for how to season chicken gizzards. This isn’t the first time I’ve fixed chicken gizzards, and I have enjoyed them in the past. I know that they need to be cooked a long time in order to tenderize them sufficiently to eat. And normally, I would cook them with rice, but I always end up with too much rice, and I don’t need the extra starch to mess with my blood sugar. *I happened upon a cooking web site and the authoress focused on how to make “dirty” rice, a New Orleans staple. I love the flavor of dirty rice, but I haven’t had it in several years. For some reason I am reminded that I had dirty rice at Clark’s Inn and Restaurant in Santee, South Carolina. I even stayed once for a night at Clark’s Inn, but have eaten at the restaurant a few more times.
I think the food is overpriced, but you are paying for ambiance. I do recall having an experience there in which I thought my waitress was incredibly rude. Rude, how? Well, I was looking at the menu, and holding it in both my hands. The waitress came to the table and put my drink down in front of me. But, when I say in front of me, she reached inside my arms to place the drink between me and the menu I was reading. It’s one of those things where, when it happens, I am immediately flabbergasted. And then as she walks away, I am left to ruminate upon the experience and ask myself if she intended to be purposefully rude. She wasn’t a young waitress, older, and she didn’t seem inexperienced, but I definitely thought “rude.” So rude, that I still, to this day, and this day is maybe 10 years later, think of her rudeness.
Interestingly, to me at least, I’ve come to Santee, SC from at least three directions and one of them from Columbia, SC, the State Capital. And several years ago, I enjoyed a visit to the South Carolina State Museum when they were hosting the Titanic Exhibition.
**Santee is not too far from the smaller town of Bowman, and the first time I passed through Bowman, I must have been on Hwy. 178. I was passing an intersection and looked to my right and to my surprise I thought I saw a shiny flying saucer. I was so sure that I had, that I drove about another block and turned right to come back around, and after the third right, I was now passing a shiny UFO, the Bowman UFO Welcome Center. I admire people who think “outside the box” and even if they are considered crazy or eccentric, hats off. I’ve been back to Bowman at least once and the UFO hasn’t worn well, and I see from Google Street View that it may be in even worse condition in the present day.
As I was looking over this page again I noted that the UFO was missing in the Google Street View. Sure enough, it is gone. I just read online that it was destroyed by fire in 2024. The owner was 73 then, and may or may not rebuild the UFO. *It was a fun thought.
I put some bacon grease in a pot and then the chicken gizzards. I had some celery (normally I don’t have any on hand) and chopped up a stalk for seasoning, and added some chicken stock also. Garlic powder, savory, ground long pepper, and later some chopped onion. I didn’t add rice directly to the pot, but had a small amount left over from breakfast. I later mixed the rice and cooked gizzards just before eating.
Let me say this, “Those gizzards were delicious!” And, I just had some more of those gizzards for dinner tonight, and “they were still delicious.” But, instead of fixing some more rice, I had a small white potato that I diced, boiled and then mashed into mashed potatoes. I added some margarine, sour cream and garlic powder to these. I reheated some of the gizzards and there was a little a gravy produced. I used just a little of this on the mashed potatoes. The gizzards were once again delicious, with the mashed potatoes. And later when I noticed that there was still some gravy in the small plate on the stove, I reheated an end piece of rye bread in the microwave. And the warm rye bread was excellent for sopping the gizzard gravy… D E L I C I O U S again!
As I was moving items around in the fridge, I found the container of seafood chowder that I had made recently. This chowder has bay scallops (which look like little mini marshmallows), chopped clams, shrimp and some cod fish. I only added one small Campari tomato, diced, and some celery chopped. I didn’t add any Half-n-Half or Cream of Celery soup as I often have in the past. I wanted to keep this chowder a little lighter. I think I also chopped some red jalapeno pepper, and added some powdered cayenne to the mix. This chowder turned out well also.
These had been reduced to $1.39 per pound and so I bought 4 chops for about $5 total.
And today I drove up to Lillington, to the Harnett County Library and bought a couple of books. I then went back into town and looked around the used stuff store. Then on to Campbell University and drove a residential section that I hadn’t gone through before (I think.). Then on to Lee’s Fresh Market. It was after 1 pm and there were many customers inside so I went around directly to the Pork section and bought a couple of thick cut pork chops. They were only $1.99 a pound (A few weeks ago they were less, $1.79 a pound.) and I fixed one for lunch after I got back home. A late lunch. They are so big that I only need about 1/3 of the cooked meat per meal, so I have enough for two more meals. They were very good once again. ***My current political comment, which I made to the check out woman, was that when I hear the ads on TV that say we have such a bad economy, I say, “Well, I know where I can buy pork chops for $1.99 a pound, and I bought some a few weeks ago for $1.79.” I also bought a package of their Pepper Bacon. The flavor of the last I bought there wasn’t completely pleasing, so I started cooking some regular bacon.

[NOTE 10/22/24]: And finally, I finished the chicken livers tonight for dinner, with another small mashed potato. If I could fix chicken livers as good as I did this mess, I would mess every week. The flavor was so good that I would actually say they were as good as any that Mary Ann has fixed, and that is a great compliment, both to me and to her.
I drove to Goldsboro today for lunch at LongHorn Restaurant. On the way, I made a detour to Nature’s Way Farm, Inc. which is listed as being in Faison, NC. I had already been there online using Google Street View, which definitely gives a feel for how things are laid out. I gave them a donation check to use as they saw fit. They have said that they make a weekly delivery to the NC Food Bank and that some of that would probably go to the Asheville area for Hurricane Helene Relief. Maybe they could use it for gas to make their delivery.
I cut a couple of slices of sweet onion and added 4 or 5 small slices of sweet Bread & Butter pickles to add to my lunch. I ordered their cheeseburger with a side of Shrimp & Lobster Chowder. My sweet onion was much better than the tough slice of onion that came on their burger, and I didn’t even try the slices of dill pickle that they provided. I cut the appetizer bread in half (I normally eat the whole thing at lunch, but leave off the burger bun that comes with the meal. I brought the half of loaf of bread home with me and ate just a little for dinner with some margarine.
Oh, forgot to mention that before I left Fayetteville this morning I went over and “early voted.” There was no one in front of me in line and I breezed through the process in just a few minutes. I think I voted for 3 Republican candidates and the rest except for maybe one Libertarian were Democrats. I don’t necessarily agree with Democratic philosophy, but until Republicans get some sense and get rid of this overpowering Trump mentality, I’ll continue to disrespect them as much as they are disrespecting our Country. [NOTE 10/23/24]: I told you I voted yesterday, and I had heard on TV that several people had reported getting unsolicited emails regarding the validity of their vote shortly after they voted. This got me to thinking so I checked the voting history web site later yesterday and it already had recorded that I early voted on that same day. I think that’s pretty neat, but I tried to check on a few other persons to see if they had already voted and couldn’t find them. But, I actually have to enter my first name as “Billie” which is my name on my birth certificate. I did see Jim Sharpe’s record but noted that his history has been disabled. I guess that is what happens once they know you are dead. *I wonder what logic Jim would have for voting for Donald Trump, if he were still alive. I’m pretty sure the logic would involve voting for the candidate that would provide the most support for the policies and beliefs that I hold dear, but the problem I have is that I don’t want a man in office that might bring America down while nixing Roe v. Wade. I don’t need Donald Trump telling me that I can’t trust our Electoral System (he still says he was cheated, and I heard him on TV just about a week ago saying it again) when it has been repeatedly proven that significant cheating didn’t occur last time. Donald is just a sorry assed, poor loser and I wouldn’t go to him to provide me with “the news and truth.” How gullible can people be to trust this guy over the long established news system? I’m not saying they don’t color their news in various ways, but if you listen to enough, different news sources you can begin to think for yourself and determine what the probable truth is.
When the Trump ads are telling me how bad our economy is, I just “look out the window to see if it is actually raining.” What do I mean? Well I don’t see the signs of a bad economy. I see two new WAWAs opening recently in Wilson, NC. I see a new SHEETZ open where I40 and Hwy. 24 cross and I bought gas for under $3 there. And I’ve been paying less that $3 a gallon for gas for over two months. *Not saying it won’t go up after the Election, because it usually does. I heard on TV about three weeks ago that the Rooms to Go Super Center (located on I95 above Dunn) was planning to expand their facility next year. And, I have bought thick cut, bone in pork chops at a local (Benson, NC) butcher for under $2 a pound twice in the last month, and these chops were delicious. Having said all of the above I question how bad the Economy currently is. All these businesses aren’t acting as if it is a bad Economy, or as if the Economy is going to worsen. Stick your head out and see for yourself. I see that I have a tendency to say or write “chicken livers” when I am actually thinking, “chicken gizzards.” I like livers & gizzards, but currently love the flavor of the gizzards.
This is a consistently easy to prepare and has easy clean up. The finished product looks good, and is filling.
I bought one of these electric woks (Aroma) for myself at Amazon, and then after I saw the quality, I bought another one as a present for Chad and his bride to be (end of May 2025). I’ve also bought them a VinChef wok, which is not electric, but is oven safe and I’ve broiled a couple of things successfully. I think the VinChef wok is a beautifully crafted pan.

[NOTE 06/13/24]: Not sure what made me go looking for “stir fry” vegetables in a can, but I found that Polar (also does Smoked Oysters) sells a “Stir Fry Vegetables” in a can. I think I paid a little over $2 for a can that I found in Wegman’s yesterday. I also bought some bean sprouts at Whole Foods in Raleigh.
The Polar Stir Fry Vegetables included some sliced water chestnuts, some bamboo shoots, some baby corn, sliced chili, and garlic. There is a lot of water in the can, but still a generous quantity of the veggies, and if you don’t want to buy a can of each vegetable and have to freeze some, this is definitely the way to add variety. Since I’m only fixing a stir fry for one, I can use half a can of the “Stir-Fry Vegetables,” for each meal. I drain most of the liquid in the canned veggies, and put them along with enough pineapple chunks for my next meal in a Rubbermaid storage container.

There are some things that I like in my stir fry, and I perpetually forget to add. I like crushed ginger & some ground ginger. I like sesame seeds. I like to add just a little pasta, Angel Hair. I also like pineapple chunks. And, I like sweetness, so some Splenda or Agave Nectar is the norm for me. *I’m a Type 2 Diabetic, so I never add sugar (white or brown) to the foods I am cooking at home. I might add some Coconut Sugar, but very little, and usually only to my coffee. If I wasn’t Type 2, I would probably be using more brown sugar than white and I like Agave Nectar.
**In January of 2012 I was diagnosed as a Type 2 Diabetic. That requires controlling my blood sugar levels with drugs such as Metformin and now Ozempic. At the time, I had about a third of a 5 lbs. bag of white Dixie Crystals sugar left in my kitchen. I totally stopped using white sugar, not even putting it in my coffee or tea and eventually the crystalized sugar formed a single hard white ball of sugar. After several years I threw out this ball of sugar.
I’ve added sliced jalapenos and at the end of summer when there are various hot peppers available that would be fun. Last year I added some Brazilian Starfish, Trinidad Perfume and Biquinho peppers to my seafood chowder. They were distinctive, not too hot, and delicious.

Last night I used the second half of the can of Polar Stir Fry Vegetables. I had even frozen them, thinking I might not use them as soon after I had the first half, but thawed them during the day. I was well pleased with the quality of these veggies. The water chestnuts were crisp and the bamboo shoots were tender. And, I had bought a box of “cornstarch” and made a slurry and added it to my stir fry. Worked “like a charm,” as it should, to thicken the sauce and make it shiny. I used shrimp (previously frozen, head & tail off and peeled) instead of chicken and now am thinking about using cubed pork, but will have to figure out how to pre-cook the pork so that it is tender, but done. *I also bought some spicy Thai garlic sauce, but haven’t actually tried it yet.
I bought a couple of cans of the Polar Stir Fry Vegetables at Walmart for about $1.68 per can. They’ve now gone up to $2.50. I see they are also available at IGA. I bought some pork and sliced it into thin strips. I added some of the Thai Garlic Sauce, some Sugar Snap Peas, some pineapple chunks and some stir fry veggies (half of the can) and I also added some slurry of Corn Starch.
The pork was just a little tough, but thoroughly cooked, and it didn’t have a great deal of flavor. I’m thinking the chicken and shrimp would have more taste, unless I find some marinade for the pork. The addition of the corn starch slurry really does make a smooth, thick sauce. Once again, the Stir Fry Veggies from Polar are excellent. No staleness or toughness to these special veggies.

I like the flavor of this “Spicy Chili Crisp.” It is cheap, about $4 per small jar at Walmart. I just noted that it has peanuts in it. I think they fry up chili peppers along with some peanuts and it ends up being a crunchy concoction. I also noted that the flavor between two jars was not exactly the same. Both jars had a good flavor, but distinctly not the same. This also has a reddish color to the sauce and imparts that reddish color to your stir fry.

One change I made tonight was that I had bought a package of 5 Pork Egg Rolls at Aldi’s this morning.
I don’t go to Aldi’s very often, but one thing that is a seasonal item is their “Stolen.” This is a dessert of German origin (I think.) and I basically think of it as a “coffee cake with fruit filling.” I’ve heard of it described as a “fruit cake,” but fruit cake to me will ever be like the “Claxton Fruit Cake.” The Stolen fruit filling might be “Marzipan” (a sugar and almonds mixture), or maybe a cherry filling.
So, I was at Aldi’s looking for Stolen, to give as a gift, but happened to see the package of Pork Egg Rolls and one of chicken egg rolls, but the chicken had a few more calories per serving, and I really wanted a pork filling anyway.
Aldi’s Pork Egg Rolls (5 pak)
Tonight, I used one pork egg roll from the package, and heated it for a minute (instead of the 30 seconds it had suggested) in the microwave. I put some Hot Chinese Mustard on my plate and some Oyster Sauce (I didn’t have any Duck Sauce.). It was flavorful. **The last few home stir fries, I’ve stopped by a local Chinese Restaurant and bought a couple of their egg rolls, and they provide a Duck Sauce in small clear plastic packets. Their egg rolls are better because they are warm & crispy, but two cost about $3.60 and the Aldi’s pork egg rolls are only about 50 cents per egg roll. I did buy a small jar of Duck Sauce, but am not happy with the flavor.
Once again, a Chinese Stir Fry at home, with an egg roll is one of the cheapest, healthiest, but still very delicious meals you can fix. I tried frying the Pork Egg Rolls at home and I don’t think it added much to the flavor. *I would prefer to buy the egg rolls at the Chinese restaurant and bring them home to eat.
Oh, and there was no Stolen left at Aldi’s and I went to at least two Aldi’s in Fayetteville and neither had the large white sugar coated dessert. I was told that “World Market” had Stolen so I went there on my way to Sprouts. I did find Stolen at World Market, but it was smaller than I remembered, and it was almost $10 per cake. I didn’t buy it.
The Duck Sauce packet shown above reminded me of another egg roll that I enjoyed regularly when I was attending the University of North Carolina at Chapel Hill in 1972/4. Usually on late nights when I was returning from a bar, or several, near Franklin Street, I would pass “Hectors, Famous Since 1969” and would stop in to buy a couple of their egg rolls. I think they included packets of Duck Sauce and Hot Mustard. I would take the warm bag of food back to my dorm, Aycock, and would pass “Silent Sam” on the way.
*As an aside, I recognized “Silent Sam” as being a Civil War Memorial to Confederate Soldiers but that was never his real purpose. “Silent Sam” was silent because he only shot his rifle when a virgin walked by, and was silent because there were never any virgins to walk by. **Not sure which is more offensive, to celebrate the Confederacy, or to insult virtuous women. Still, I doubt if anyone actually checked his weapon to see if the mechanism had rusted and no longer worked for that reason.
And on “egg rolls I have known,” the only other really, really good egg rolls I’ve ever had were at “Good Luck” near the corner of Ramsey Street and Tokay Drive. They only had a few booths inside, but they had gigantic rolled egg rolls that had a crispy fried shell. I think someone once told me they were double fried, whatever that meant.
And Google AI is so informational: “Double frying an egg roll is done to achieve maximum crispiness by allowing the initial fry to cook the filling while removing excess moisture from the wrapper, then the second fry at a higher temperature creates a crispier, more evenly browned exterior without overcooking the inside.” **I wonder if I could double fry those store bought egg rolls to get a crispier exterior?
The other thing I recall is that there was a giant Chinese take-out box on a post in front of the restaurant with the name “Good Luck” on it. I’m pretty sure it might have rotated at one time, but I never saw it in operation. *And after several years they went out of business. I think the old Chinese gentleman who was the cook may have either retired or died. **The location has been a combo Dunkin Donuts/Baskin Robbins restaurant for many years now.
I made some more good “chicken stir fry” again tonight. I forgot to add the white sesame seeds, but surprisingly, the okra and asparagus incorporated very well. I’ve added asparagus previously without any okra, and the flavor was minorly distracting. But neither the okra nor the asparagus fought the finished product.

[NOTE 05/18/25]: It has been quite a few years since I had the egg rolls at “Good Luck” in Fayetteville, North Carolina and the location has been a combo Dunkin Donuts & Baskin Robbins Ice Cream Shop for many years. But, I’ve filed those large, crispy, flavorful on the outside and inside egg rolls as the best egg rolls I’ve ever had. It seems to me that two of those egg rolls made a meal.
For many years, while living and working in Fayetteville, I enjoyed many lunches at Hunan Garden on Raeford Road near the Harris Teeter. It even changed ownership and I still liked the food, but then it changed ownership again, and I sat in a booth and said to myself, “I thought I liked the…” and then I realized that I hadn’t changed but they just didn’t fix it in a way that was delicious to me. They also changed to policy where I could ask for steamed veggies instead of a mound of white rice (type 2 diabetic). That was a surprise, I asked my waitress if I could make that substitution and she said, “no.” I had to think a while and kept trying to convince myself that I had made that substitution many times before. I even asked at the register if it was possible to substitute veggies for rice and was told the policy was “no.” I then realized that the flavor of the food and the relaxed substitution policy were gone… and I’ve not been back since and that is probably 5 years or more. Before COVID. If they ever got new ownership I would try it again, and I do check periodically online to see if the reviews have changed. I just checked the reviews again, and they were either Oh well. 5 years old or a mix of excellent or horrible. I’m guessing that they are still horrible. And they were so good for many, many years.
My favorite Chinese restaurant is currently located in Asheboro, North Carolina and is called “No. 1 China Buffet.” They have several items that are reminiscent of other good Chinese buffet restaurants I’ve visited throughout my years. Hibachi Grill in Fayetteville has many items that are delicious, but I’ve stopped going there since COVID. I may have been once, or twice but I just don’t go there. [end NOTE]
Garlic Cauliflower I steamed my cauliflower first and in a separate small skillet I made the Garlic Sauce with Avocado Oil, Red Wine Vinegar, chopped garlic, smoked paprika & some Equal sweetener. I normally will “turn” anything with vinegar with a little sweetener, and this worked well.
[NOTE 01/29/24]: I am making a note regarding the term “London Broil”. Somewhere online, not very long ago, I read an article that said that “London Broil” wasn’t a type of meat (steak) but a way of cooking on high heat and close to the burner. I explained this idea to Jeff Mitchell yesterday when I was visiting to watch the NFL Playoffs. But this morning, early, I am not finding that article and it seems that London Broil is steak that has little fat content and needs to be cooked on high heat, near the burner, to keep the meat tender. But, I may continue to use the term “London Broil” when describing how I cook the Round Bone Lamb Chops and the Pork Chops in the oven, on high and near the top burner. Cooking it this way provides an amount of “char” on the meat, which means “flavor.” [end NOTE]
I cooked the lamb in the oven as London Broil. The round bone lamb chops normally are sold in pairs (not always) and usually I eat one and put the remaining one in the fridge for another meal. This time, I cut the larger chop so that I should now have two meals remaining. I’m trying to eat a little less, because I know that less weight makes it easier to control my Blood Glucose Level. The Garlic Cauliflower was just mildly sweet but I could see this and German Potato Salad (both have vinegar & sweetener) as being interchangeable as sides. I added some dried tarragon to my garden peas, and a little sweetener. I think I also drained the original liquid from the canned peas, and added Chicken Stock back and maybe a dollop of margarine. *I also went to the extra trouble of making a slice of garlic bread (white mountain bread slathered with margarine, and sifted generously with garlic powder). This toasts in the oven quickly.
I don’t do this always, but sometimes I add lime juice & sweetener to my steamed broccoli. I first learned of how good the steamed broccoli could be with lemon juice & sweetener at Red Lobster. I would order the steamed broccoli with the blackened fish lunch special. At some point I wanted a different flavor for the broccoli than just salt & butter and found the citric & sweet combo worked well.
[NOTE 01/29/24]: I just noted in the paragraph above, that I was writing the word “cauliflower” but actually talking about “broccoli.” And oddly enough, I had written “steamed cauliflower” three times, but the last sentence (without even noticing) said “broccoli.” [end NOTE]
I probably first had a baked sweet potato, with sour cream, cinnamon and sweetener at one of the steak restaurant chains. Maybe Longhorn. I think I first ordered it with a cheap steak and liked it. But, I also like a “loaded” baked potato (Russet) with sour cream and butter. *It was probably America’s Test Kitchen where I first learned of the trick to a tasty baked potato. You pierce the potato skin all around the potato and then roll the potato in a saline solution (salt & water). The salt in the water sticks to the skin of the potato and forms a salty skin.
I like steamed cabbage, but also like cabbage slaw (with mayo & half-n-half, sweetener, vinegar). *I don’t usually add carrots to my slaw, but I have added sweet onion before and like that. I’ve also played with slicing the cabbage into thin, long slivers but sometimes have put the chopped cabbage in a blender with plenty of water and blending the cabbage until it is all just little fine bits. The water keeps the blended cabbage from becoming total mush, and each little sliver of cabbage is a consistent size. **I do like using Duke’s Mayo and some Half-n-Half and sometimes either a little vinegar or lime juice to thin it out.
The Liver Pudding shown above is a breakfast dish for me. I heat the liver pudding up in a small fry pan, on the stove top, in a little bacon fat. I peel the skin off the liver pudding and mash it down. It softens quickly. I also slice a couple of half inch wide polenta slices and put them in my waffle iron & press them down. Sometimes the polenta waffles brown just a little, but usually they just get warmed through. Still, I like these polenta waffles with the liver pudding and with the chipotle/avocado/chicken soup I make often. The chipotle/chicken soup has Southwestern flavors, so polenta, which is corn, works well, as do adding chopped cilantro leaves, or some chili or cumin powder.
The round scrambled egg is made in the microwave in my onion cooker. Currently, I have a bag of shredded 4 Mexican cheeses and I like adding that to my egg as it cooks. The cheese melts inside the egg. *I bought the 4 Mexican Cheeses blend with the intention of making a Southwestern Salad, but haven’t gotten around to it yet, mainly because the simple salad has a lot of calories. It includes: black beans, romaine lettuce, onion, ranch dressing & the Mexican Cheese blend.
I made a Cilantro-Lime Dressing when I fixed a salmon steak about a month ago. The dressing was good, different, but pleasant, but the next day my weight & resting Bgl jumped way up. I attributed the jump in the wrong direction to the dressing, but also wasn’t sure if I had eaten a larger portion of salmon than needed. Oh, salmon is pleasant, but it’s not something that I would repeat often. I will stick to my meat rotation of ground beef, steak, pork chops, lamb and roasted chicken (which I get from Publix). I do make a delicious tasting Seafood Chowder, which I do like to repeat. But, I prefer a little heat to the chowder and the end of the summer is when I can get some delicious peppers up at the State Farmers’ Market in Raleigh.
The savory rice thins crackers are delicious. They go good with salad and soups, and as a snack they take the Nueske’s Smoked Liver Pate and the two goat cheeses I really like, Bucherondin and Capricio de Cabra (sp). I had forgotten about the Bucheron Goat Cheese until about 3 months ago when I saw some in Wegman’s. I took a hockey puck of the Bucheron cheese home and when I tried it I recalled that this was one of the special cheeses I had tried years ago and liked. It might have been more than 30 years ago when I first tried this cheese, while I was living down in Jacksonville, NC. I probably couldn’t find it after I moved to Fayetteville, almost 30 years ago, and so I forgot about it. I’ve mentioned this elsewhere, but these crackers do not get soggy quickly when moisture hits their surface, so they provide a nice crunch with either soup or salad veggies.
I’ve found that Sprouts sells a cheap bottle of Pomegranate Juice. It does have a lot of sugar, but this juice also is supposed to be good at controlling blood sugar levels. *It is difficult to find low-sugar dried cranberries, but I like these with chocolate drops & either cashews or walnut pieces. When you do find low or no-sugar dried cranberries, they are much more expensive than the sweetened dried cranberries.
I was just watching TV, as I normally am, even if I am reading or doing something else on the laptop, and I saw a phone commercial. I don’t recall which company (AT&T I think.), but they have the young woman that was rather chesty, but has toned that down. What I found exceptionally funny was that the two women were looking at wedding dresses, and there were three white dresses displayed on mannequins with a sign that said, “Buy Two, Get the Third Dress Free.” One woman asks the other woman, “Is that a good deal,” to which the reply is, “No.” I started replaying this in my mind and suddenly thought that whomever wrote this commercial was very humorous. Ludicrous to think about buying two wedding gowns, and then to offer a third gown, even more idiotic, but how funny!
[ 01/04/24 ]: I was looking for library book sales online yesterday and came across the online site for the Chapel Hill Library (friends) bookstore. I saw there was a pickup area where book purchasers could come to pick up the books they had bought online. *I did drive all the way to Chapel Hill and drove into the Staff Parking area, where there were a couple of “pickup” parking spots for the two days designated. I then drove around and parked in the Library parking area and made a call to the Publix in Fayetteville to reserve a “Roasted Chicken – Original.” I told them I would stop by to pick up the chicken at about 4:30 pm, and within a few minutes of that time, I was there. They were busy, but I saw what I wanted on the hot counter. I took the bag with the roasted chicken in it and went to the Service Desk, where I was able to pay and where I asked them to notify the “Prepared Foods” section that I had already picked up my order.
While looking online, Google Maps, for the Chapel Hill Library location, I viewed the aerial view of the location where the old Southern Seasons store was located. But, there was nothing there, or very little. The store was gone, or a good portion of it. I wasn’t sure if I was looking at a view from a long time ago, or something more recent. But, when I actually drove by this location later in the day, “Yup, it’s gone.” And, I just checked online and they started to demolish the Southern Seasons building back in March 2023.
I liked visiting & shopping at Southern Seasons. The store was large, had a cafe/restaurant section accessible from inside, but maybe not a part of Southern Seasons proper. There was a large coffees/teas section, cheeses & deli meats, a wall of candies, a wine and spices section and a large area of kitchen utensils. I think this is where I first purchased “Grains of Paradise.” They also had “tongue” baloney. They had the Hot “Chinese” Mustard that you could add water to, for egg rolls.
Once, I seem to recall buying the various ingredients to make a sandwich lunch in my car. I had a tongue baloney sandwich and I think I bought a single serving bottle of special ginger ale.

On my way up to Chapel Hill, I stopped by Golden Hex in Cary, walked up and down the various isles, past the cheese and deli meats section, and only ended up buying some pickles. As I am watching more closely what I am eating, I know I don’t need the fatty sausages and deli meats. I’m not saying I don’t enjoy the different flavors, but I know at this time I don’t need to buy any more. I wish Golden Hex well though!
After Golden Hex, I drove over to the Cary Wegmans and went in. I had been thinking of buying a single Miami Onion Roll (@$1.10) but when there decided against it, and although a large blueberry bagel would have been delicious, I didn’t buy one of those either. I looked at the Andouille sausages, but didn’t buy those either, although an Andouille & Lentil soup would be good (today is much colder than yesterday).
I did buy a puck of Bucheron (semi-soft, tart, goat cheese) and also some yellow/orange grape tomatoes. I looked for unsweetened dried cranberries, but they only had sweetened ones. I did buy dried Currants that were supposedly unsweetened, but later noted that they had a bunch of natural sugar.
I walked out to my car and drove to a less crowded section of the Wegman’s parking lot and ate the lunch I had brought with me, along with a little of the Bucheron cheese. I had carried my homemade Greek Salad, with dressing, a cooked hamburger patty, a slice of sweet onion and a slice of wheat bread, cut in half and dressed with my mustard/horseradish/sweetener on one slice and Duke’s Mayo on the other. I had a couple of the rice crackers I like with my salad. They don’t become soggy, but these had become tougher to chew.
This Wegmans is in the flight path for RDU Airport and it is amazing how many large jets fly overhead in a twenty minutes period of time. There must be at least two runways, set slightly askew, because all the jets took one of two different angles toward the airport.
After going by the Chapel Hill Library, I headed back through the UNC Campus & Chapel Hill on a slight “scenic” tour. I drove past my old dorm (Aycock), who’s name was changed a few years ago because Charles B. Aycock was racist. But in his day, he was the next Governor of North Carolina after Lindsay Russell (Republican and distant relative). But, they had a mutual respect for each other, and Russell left the Governor’s Mansion better kept and stocked for his successor.
When I lived in Aycock Dorm in the early 1970s (1972-74) it was a standalone three level building (4 if you count the basement). I lived on the 3rd floor, 318 I think. But some years ago they built a connector to an adjacent dorm and completely got rid of the small courtyard and bicycle parking area at one end of these dorms. Oh, there was a Lewis Dorm at that time. Probably still is. But, I had a slightly younger roommate that would call out from our 3rd floor window and say, “Lewis. Leewisss…, Lewis.” And someone from Lewis Dorm would inevitably say, “What,” to which my roommate would reply, “Eat Shit!” *This roommate also taught me the art of cussing.” I think to that point my cursing vocabulary only consisted of “shit,” “damn,” and the occasional “fuck.” But this roommate would string together a bunch of dirty words in a quite artistic manner.
I don’t recall the name of this roommate (he wasn’t Keith Smith, my first roommate at Carolina, and Keith a Senior), but he was a very good tennis player and had nice rackets. I was never interested in tennis while there, but only a year or so later when attending Campbell College (it was a college then) did I take up the sport of tennis, and after several years was an okay player, and even taught both youth and adults (through Onslow County) tennis.
The basic ingredients came to about $7.50. I added a clove of garlic ( large chop ), dried basil, S&P, a little Splenda, some Agave Nectar and a little lime juice. *Just a little Splenda and Agave give this chili a slightly sweet taste, and the chipotle peppers, chipotle powder, red pepper flakes, and cayenne give it a good heat. I would add some chopped jalapenos (red or green) for extra flavor and I did add some chopped yellow bell pepper.
I’ve tried something like this before, but it did not turn out well. This did satisfy! It was a little sweet, with some heat (about 3 chipotle peppers) and large chunks of Vidalia onion.

I tried this a second time, but instead of using canned white chunk chicken, I bought a whole baked chicken (original flavor) and shredded some of the white meat and added it to the chili mixture. This worked great!

I had some Mission Corn Chips left, and they went well with this chili. I see that avocado, cilantro, sour cream and Mexican cheese are suggested toppings for this. *The second time, I added a bunch of cilantro to the chili during cooking. I ate an avocado with the chili, and this was good.
I was in the Compare Grocery the other day and saw some red jalapenos (marked that way on the price card). I only got about 4 of these and took them to the checkout along with the other items I was purchasing. The girl rang up these as “Thai Red Chilis”. I think the price was about a dollar more per pound than the sign had said for the red jalapenos, so I said to her that these weren’t Thai Red Chilis but Red Jalapenos. She stopped and showed the clerk at the next register, and whatever was said, she still rang them up as Thai Red Chilis. It could be that both clerks were referencing the wrong code number, or maybe the grocer had labelled this item incorrectly in the system. But, I told her I didn’t want to purchase them and she set them aside.

Seems that the Red Cayenne Peppers are slightly different in curvature and a little bend at the end of the pepper, but Thai Red and Red Jalapenos are distinctly different.
NOTE [05/30/22]: The oven-roasted chicken was a great idea for this, but at about $7.35 for the whole baked chicken, this is a great deal. I had a couple of drum sticks, and a bunch of white breast meat that could be shredded for the chili, and/or for a sandwich, etc. I was sort of surprised at how cheap the whole baked chicken was this time. I think the price had gone up (several months ago) and was over $8.
NOTE [ 12/16/23 ]: The can of Bush’s White Chili Beans now costs about $1.98 at Walmart, previously $1.76. I did go to Compare Foods again and bought some green Jalapenos, Poblanos and some red peppers (not sure if they were red Jalapenos or some other variety. I had a small can of diced Green Chilis. I don’t see if I added some chopped onion before, but, I did this time. I used sweet onion but that is just because I have an overstocked abundance of the sweet onions. Added some cayenne pepper, some whole Cumin seeds, some dry Cilantro & dry Parsley. Did add the bit of Splenda & Agave Nectar.
Funny, was just reading above and the same thing happened again at Compare Foods. The girl at the register rang up a red pepper, but it was a couple of dollars more than what the sign had said. I had already taken a picture of the red peppers & listed price and I ended up getting these cheaper, maybe even a dollar cheaper than had been advertised on the signage.
I was fixing some Chipotle, Chicken & Avocado Soup for lunch and had thawed about three raw chicken strips. I fried the chicken in some bacon fat, and then shredded it all using about a third of it in the lunch soup. The rest I put in the small pot that I had used for the soup, with the white chili beans and other ingredients (dicing the various raw chili peppers). I’ve got the chili in the pot, on the stove-top, and cooking on low heat.
Even though I didn’t use a roasted chicken from Publix, the whole roasted chicken for about $8 from Publix is a great deal. The two drumsticks are each a good meal, and the breast meat from each side is another couple of meals, and what is left over is enough for 3 more portions… maybe for a chicken salad (with sweet bell peppers, onion, mayo and some diced celery), or a chicken salad with Romaine lettuce, Kalamata olives, Pepperoncini peppers & a dressing of olive oil, red wine vinegar, Dijon mustard, sweetener and dried Italian herbs. This is reminiscent of a Greek Salad, with which I currently have become enamored.
I came up with this soup, “on the fly” because I had purchased some rapini (broccoli rabe) at Sprouts. I think it was under $3 for a good sized bunch of buds, leaves & stems which I recognized as a good deal! The main grocer (I take him to be so.) at Sprouts, keeps a well stocked vegetable & fruit section. Often there are very good prices, but you would think that Sprouts might be “high end” and they are on some things.

The first time I made this, I used a odd sized can of Campbell’s Chicken Noodle Soup and the finished product had such a distinctive flavor (due to the rapini, which I had steamed first separately) that I wanted to make it again. The second time, I realized that I would have to supply the canned soup ingredients. I used chicken stock, chunked chicken breast, margarine, and pasta shells. I cooked this all in one pot, and did not pre-steam (cook) the rapini. Not sure on how to get the pasta shells to be done, without overcooking the rapini. The rapini did not bleach out though.

One pot process:
I chopped the onion and put it in the pot first, with some margarine and olive oil and began to brown the onion slightly. I then added the dry pasta shells which became shiney with the oil & melted margarine coating. I poured in some chicken stock to cover the dry pasta, and later added some water. I let the pasta cook for a while to get it near being done, but then added the rapini, mushrooms and chunk chicken. The red pepper flakes, marjoram, salt & pepper are added throughout. I only added three garlic cloves slightly crushed, and some garlic powder.
NOTE [ 09/16/23 ]: I had some mild peppers (bought at State Farmer’s Market – Raleigh) left and a few chicken strips. I also had just bought (yesterday at Pate’s) some good looking okra. This soup has chicken, lentils, carrots, peppers, okra, onions and a few small tomatoes cut up. Although I read online that you shouldn’t (or its not done) include okra and Gumbo File powder to your soups. Supposed to choose one or the other. I think Gumbo File powder is supposed to be used as a thickener. *This is made from Sassafras. I remember a long time ago that my mom and I were walking on the old farm, way in the back along a sandy road. I think there was a Sassafras plant growing in the middle of this path. We managed to cut out a little of the Sassafras root and took it back home and made hot tea out of it. With sugar, and some creamer, the Sassafras tea was good.
***As I recall, I didn’t like the flavor of the Chicken Rappini soup. It looked good, but I wouldn’t make it again. But, the latest soup above had good flavor, with just minor heat. The okra added to it’s earthy flavor.
